The hubby and I work full time and by the time we get home from work & the gym, we are not about to cook a full on dinner! We’ve always preferred to eat healthy and when the whole kale craze happened, I knew I had to try it. I heard about this amazing Kale Salad at True Food Kitchen Restaurant. It’s basically a Caesar Salad minus the creamy dressing, romaine lettuce & croutons. I found the recipe and since then, Kale has always been on our market list.
I’ve made this salad a million times and I promise you, you will be hooked too. Kale has great health benefits and is high in Vitamin K, A & C.
True Food Kitchen Tuscan Kale Salad
1 10oz bag of Chopped Trader Joe’s Tuscan Kale
juice of 1 lemon
1/2 cup of extra-virgin olive oil
2-3 cloves garlic, mashed
salt & pepper, to taste
hot red pepper flakes, to taste
2/3 cup shaved Parmigiano-Reggiano
1/2 cup freshly made bread crumbs from lightly toasted bread (optional)
In a small mixing bowl, whisk together the crushed garlic, lemon juice, extra virgin olive oil, salt & pepper and red pepper flakes.
You’ll notice that as you mix, the dressing will appear creamy. This is what the dressing should look like when done whisking.
Pour the dressing over the Kale. I love using a huge salad bowl for this salad just because when you toss it, it can get all over the place!
Once you toss the kale and all the leaves are completely coated with the dressing, add the Parmigiano-Reggiano. The True Food Kitchen recipe calls for breadcrumbs, but I prefer to not add the extra carbs.
This salad is very filling and can feed 2-3 people. It goes with every type of protein. I’ve served it with grilled shrimp and chicken. I’ve even added chia seeds and quinoa to add some extra nutritional benefits.
Another plus is that it’s also great the next day! The Kale will not get soggy, I promise you that.
